Spinach, broccoli and basil pesto

A weekly dinner fave in our house. This spinach, basil, and broccoli pesto is a fresh, healthy twist on the classic. Packed with spinach, basil, and broccoli, it’s a smooth, flavourful sauce that’s perfect for pasta, pizza bases, or as a dip. A delicious way to add a burst of green goodness (any way to get those greens in right?)




Ingredients

1 cup spinach leaves
1 sachet semi dried basil (or a handful of fresh)
1/2 cup broccoli florets
2 tablespoons sunflower seeds (or cashews/pine nuts)
1 garlic clove
2/3 cup grated parmesan
1/2 cup olive oil
Good squeeze of fresh lemon juice
Salt / pepper to taste (optional)

Bakers Tip!

If you have leftover it also freezes well and is great for a quick dinner back up.

Method

STEP ONE
Place all ingredients in a food processor / bullet and process until smooth (paste / dip like consistency).

STEP TWO
Toss through pasta or use for pizza bases.
