Beef and black bean tacos

Dig into the deliciousness of these Slow-Cooked Beef and Black Bean Tacos! Beef and black beans are simmered to perfection in nutrient-packed bone broth, with the added flavours of cumin and smoked paprika. Wrapped in a warm tortilla, filled in a taco or served with rice this dish is a tasty and wholesome family favourite!

Ingredients

2 tsp olive oil
½ red onion chopped
2 tsp each smoked paprika and ground cumin
500g pack lean beef mince
500ml passata
1 cup spinach leaves chopped
1/2 red capsicum thinly diced
400g can no salt diced tomatoes pureed (only add if cooking this for a rice dish)
400g can black bean drained and rinsed
1 teaspoon natural beef bone broth (we use Nutra Organics)
Salt and pepper to taste (optional)

Bakers Tip!

You can add anything you want to this dish. Our fave taco toppings are avocado, smoked paprika corn, grated cheese and greek yoghurt. Fresh coriander is also really yum.

Method

STEP ONE
Heat the oil in a large frying pan, add the onion and cook for approx. 5 mins until softened. Add the spices and cook for 1 min. Add the mince, breaking it up with the back of a wooden spoon, and stir until cooked through.

STEP TWO
Transfer the cooked meat to the slow cooker. Stir in the passata. Stir in the pureed tomatoes (if using for a rice dish or if you prefer a more saucy taco, that can get messy though). Add the chopped capsicum and spinach. Finally add the bone broth and any salt / pepper if using. Pop the lid on and cook on high for 3-4 hours or low for 7-8 hours.

STEP THREE
Add the black beans 30 minutes before the end of cooking. Once cooked serve with rice or make tacos or wraps. Add any toppings you like!
