
Oven baked chicken rice

There’s two reasons we love making this dish. One because everyone loves it and two because there’s minimal dishes to clean up – winning on both counts!!!! Another dish that you can adapt in anyway you choose.
Ingredients
2 tbsp olive oil
2-3 boneless and skinless chicken breasts
1/2 - 1 tsp ground paprika
1/2 - 1 tsp dried oregano
1 tbsp butter
1 onion, finely diced
2 cloves garlic crushed
1/2 cup chopped broccoli florets
1/2 zucchini finely chopped
1 cup loosely packed spinach leaves finely chopped
2 cups uncooked brown rice
4 cups water
1 heaped teaspoon natural chicken bone broth (we use Nutra Organics)
Salt and pepper to taste (optional)
Bakers Tip!
Mix up this recipe by adding different vegetables. My kids like to add a little bit of soy sauce to their chicken rice.
Method
STEP ONE
Preheat the oven to 180oC
STEP TWO
Heat a frying pan with the olive oil. Rub the chicken on both sides with the paprika and oregano. Place the chicken into the hot frying pan and brown on both sides for a few minutes each. Remove the chicken and set aside in an oven proof baking dish.
STEP THREE
Heat up the butter in the same frying pan used for the chicken. Add the vegetables and cook for approx. 5 minutes until they soften. Add in the uncooked rice and stir for 1 minute. Then add the water and bone broth. Bring to a low boil and then remove from heat.
STEP FOUR
Transfer the rice, vegetables and broth liquid into the same oven proof baking dish as the chicken, pouring it around the chicken. Cover the baking dish with foil and place into the oven for approx. 45 mins or until all of the liquid is absorbed and the rice and chicken is cooked through.
STEP FIVE
Once the dish is cooked and out of the oven you can remove the chicken from the baking dish. Cut or shred the chicken to your desired size (or the size your kids will eat it) and then toss it back through the rice. Serve up and enjoy!
